Basics
Grill safety
The grill is a fire and a meal. The rules are short, and they are not optional because the food smells good.

The steps
Outside, lid open, you stay with it.
Screenshot the card, or print it. The links below stay on the site.
- 01Outside only. Well away from the house, the deck rail, and anything hanging overhead. A garage, a covered balcony, and under the eaves are not outside. If the maker prints a distance, use that.
- 02Gas: open the lid before you light it. If it does not catch, turn the knob off, leave the lid open, and wait five minutes before you try again.
- 03Once a year, and any time you reconnect the tank: soapy water on the hose and fittings, tank valve on, burners off. Bubbles mean a leak. Shut the tank off. Do not light it.
- 04You stay while it is lit. Kids and pets stay at least three feet back. If you have to go inside, turn the grill off first.
- 05Scrape grease off the grates and empty the tray before you light. If grease is already burning, shut the gas off, or close the lid on a charcoal grill and let it die. Do not throw water on it.
- 06Charcoal: starter fluid on cold coals only, before the match. Never on flames. When you are done, coals go in a metal can, outside, away from the house, until they are cold.
- 07If you smell gas and you cannot shut it off, leave. Call the fire department from a safe spot. Do not move the grill, and do not look for the leak with a flame.A flame is not a leak detector. If you smell gas and cannot shut it off, leave, then call from a spot that does not smell like gas.
- 08Poultry, including ground poultry, is done at 165°F in the thickest part. Ground beef, pork, veal, and lamb are done at 160°F. Color is not the test.
